Ken Gregory provides everything from onions to oyster plants for area restaurants and clubs. He built his burgeoning business from “800 bucks and an old van.”

Did you ever wonder where the good restaurants find their beefy tomatoes, their tender mache, their knobby salsify? (Also known as Oyster Plant, recipe follows.)

Most of the best places in town call on Ken Gregory of Kenny’s Produce. Don’t get it wrong, he doesn’t grow the stuff, he finds it and buys it and delivers it fresh or stores it in his large warehouse coolers for wholesale pick up. This is not a roadside stand; this is an industrial-size operation and getting bigger all the time. “We set goals for each year and so far we’ve made a 15 to 18 percent increase a year.  We’ve now got 10 families to support; our drivers and others depend on us.”

Ken started his now booming business about five years ago with “an old van and eight hundred bucks.” He now has more than 100 customers, including the “white tablecloth” places and practically all the area country clubs. He also deals with some more humble restaurants and even with the county jail because produce doesn’t keep forever and he needs a market for the less than perfect, reduced-price specimens. Special orders are a big part of his business.
