For many, the never-ending quest to feel good and live an active lifestyle has led them to look at dietary trends and their efficacy in reducing disease and age-related ailments. A plethora of diets extolling health benefits abound, but if you’ve ever seen the popular film documentaries Food, Inc. or Forks Over Knives, you may have been persuaded to try a more plant-based diet, either by eliminating meat, fish and poultry – vegetarian – or excluding animal products and dairy altogether – vegan. Proponents of a plant-based diet readily share the benefits of nutrition derived solely from grains, legumes, nuts and seeds including greater mental alacrity, mobility and energy.
Carol Quintana of Vero Beach was on a personal mission to find a healthier lifestyle as far back as the 1980s. She had owned and run a successful restaurant business serving gourmet American cuisine for 11 years when she began to question her dietary choices.
