For more than 20 years, chef Christopher Bireley has been perfecting his culinary skills, and recently opened Osceola Bistro on 13th Avenue in the former location of the Greenhouse Café, across from the downtown post office.

Osceola Bistro features contemporary American cuisine that will please both the sophisticated and casual diner’s palate. Chef Bireley’s creations embrace the farm-to-table movement, which means that a majority of the food is supplied by local farmers and fishermen, guaranteeing seasonal, fresh ingredients. Some of the dinner entrees on the menu include shrimp and grits, homemade chicken and dumplings, stuffed pork loin and crispy salmon. Guests can dine indoors or on the outside patio surrounded by fresh herbs, tropical plants and seasonal natural décor.

Chris is a Vero Beach native who has traveled the world studying and preparing exotic cuisines in the Caribbean, Italy and Ireland. He has also worked in fine dining establishments in Napa Valley, Calif., and Charleston, S.C., and worked for celebrity chefs Michael Chiarello, Tom Colicchio and Cyndi Pawlcyn.

Osceola Bistro is located at 2045 13th Avenue and is open for lunch and dinner. Hours are Monday through Friday 11 a.m. to 9:30 p.m. and Saturday 5:30 to 9:30 p.m. 569-1299. www.osceolabistro.com.
